Here is a summer recipe for rhubarb that my mom used to make during summertime. The recipe is super easy an absolutely delicious.
How do you like your rhubarb?! Never tried it? Here’s your invitation to whip out your inner chef and put together this easy, yummy recipe. Your family and friends will be impressed!
1 cup flour
3/4 cup oatmeal
1 cup firm packed brown sugar
1/2 cup melted butter
1/2 teaspoon cinnamon
Mix these ingredients. Press half of the mix into a 9-inch dish. Cover with 4 cups diced rhubarb. Sprinkle the remaining mixture over the rhubarb.
In a saucepan mix:
1 cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla
1 cup water
Cool until thick and pour over the rhubarb.

Cook for one hour at 350 degrees. Enjoy!!
